ORGANOLEPTIC CHARACTERISTICS

Bright red color with slightly purple hues. Wide, vinous odor; intense aroma, where floral notes of fresh and fruity red cherry, cocoa, blackberries and blueberries are highlighted; savory, full and balanced. Slight nuances of licorice and a hint of vanilla; enveloping, warm, soft and pleasant aftertaste.

 GRAPE VARIETIES

Cabernet, Syrah, Petit Verdot.

 VINIFICATION

Small capacity stainless steel vats, maximum 50 HL. Temperature- controlled fermentation with pumping over, punching down and delestage. Maceration for a minimum of 15 days.

 REFINING

Refinement and maturation in Slavonian and French wood barrels for a short period.

FOOD PAIRING

Recommended Lentil and spelled soups, first courses seasoned with meat sauces, tomato soup, panzanella, beans with flask, livers, grilled meats, baked pork and fresh and seasoned cheeses, typical Tuscan appetizers, lard of colonnata, game and cold cuts in general. To be served at a serving temperature not lower than 18 ° C.

Microclimate

 

The climatic conditions of the Tuscan Maremma have always allowed an excellent cultivation of this grape variety which requires a warm, sunny and windy temperate climate, with a tendency to dry soil and close to the sea.

Medium mixture with tufaceous, clayey and partly stony rhino layers.
