ORGANOLEPTIC CHARACTERISTICS
Straw yellow with crystalline and greenish reflections, sometimes golden. Delicately aromatic, fruity with notes of white fruit and floral nuances of rose, apricot, pineapple, quince, almond, herbs and wild flowers, wild fennel, sage, rosemary and broom. Lively, savory flavor, with the presence of mineral salts, fresh with a harmonious and full aftertaste, with precise flavors of the sea and Mediterranean scrub.

100% Vermentino.
VINIFICATION
Vinification strictly in white, with short cold maceration of the crushed grapes; temperature-controlled fermentation in small-capacity stainless steel tanks with permanence on the lees to enhance the olfactory and gustatory characteristics.
REFINING
Maturation for 6 months in stainless steel and refinement in bottle for 3 months.
FOOD PAIRING
Recommended food pairings: Dessert wine, fish-based appetizers, shellfish and crustaceans, vegetable risotto, rice soup, seafood cuisine, fresh cheeses. To be served at a serving temperature not lower than 12 ° C.

Microclimate
